The Mierisch family has been producing coffee in the mountains of Nicaragua for over a century. Today, they operate several farms—including three in Honduras. This specific lot comes from Finca Los Placeres, located in the Matagalpa region. It’s the only Rainforest Alliance-certified plantation of the family, spanning around 270 hectares, with roughly 10%—about 28 hectares—preserved as untouched wild forest.
This lot is Ethiosar, a hybrid of hybrids. It’s a complex genetic cross designed to enhance cup quality while building resistance to leaf rust, a disease that devastated coffee farms across Central America last decades. Stay focus: Ethiosar originates from a Sudan Rume crossed with Sarchimor (itself a hybrid of Villa Sarchi and Timor), and was later re-crossed with Villa Sarchi. The Mierisch family has been working with this variety for over 10 years and sees huge potential. It adapts well to diverse climates and soil structures, and its cup quality is very high—scoring 90+ in a private auction in 2021.
A final note on the process: the Funky Natural method accelerates the initial fermentation phase (3–5 days) by placing the coffee in thicker piles at higher ambient temperatures on the patio, rather than spreading it in thin layers. Then the rest of drying is carefully monitored until fully stable product.
