La Reserva Kanaa is making waves as one of Ecuador’s most promising farms. Under the leadership of the Quevedo family, it has already gained Cup of Excellence recognition by producing stunning coffees. Nestled in the humid Amazonian province of Zamora Chinchipe, in southern Ecuador, the farm faces unique drying challenges, requiring precise post-harvest care.
This lot is an anaerobic washed Sidra/Wush-Wush, processed through a two-stage fermentation for added depth and complexity. The cherries undergo an initial 48-hour fermentation in sealed plastic tanks before being pulped and fermented again for 72 hours, resulting in a cup that’s both structured and expressive.
