I've noticed more Pacamaras from several producing countries recently in the listings. For some reason, Pacamaras can sometimes lean toward the Brazilian side (no offense) of the flavor spectrum. On top of that, it’s a variety that requirs a touch of skills from the roaster. Roasting these bad boys right requires serious know-how and technique. But when you nail the right parameters, let me tell you—Pacamara shines on another level. Vaga Bon Café has a special consideration for Pacamara, bringing back memories of the bangers from my early days of coffee pilgrimage.

I requested samples straight away when I saw it on Nordic Approach's listing. This specific lot comes from Alberto Martinez at Finca La Parada, a first-generation farmer who purchased his farm 15 years ago in the mountains of Huila.

This coffee is for you if you enjoy layers of complexity with bright plum fruit and fine herbal notes, candy after taste and soft fermentation touch
